  • 3 carrots, peeled and sliced on the diagonal into ¼-inch wide rounds (to yield about 1 cup sliced carrots)
  • 2 tablespoons Thai green curry paste*
  • 1 can (14 ounces) coconut milk (I used full-fat coconut milk for a richer curry)
  • ½ cup water

  • 2 Tablespoons chopped shallots
  • 1 cup (about 7 ounces) chopped Yukon gold potatoes (you can leave the peel on)
  • ¼ cup chopped carrots (about 1 small carrot)
  • 1/3 cup chopped onion
  • 1 cup water
  • ¼ cup raw cashews (soaked for 1-5 hours and drained if you your blender is weak)
  • 2 teaspoons sea salt (use 1 ¾ teaspoons if using Earth Balance)
  • ¼ teaspoon garlic, minced (about 1 medium clove)
  • ¼ teaspoon Dijon mustard
  • 1 Tablespoon freshly squeezed lemon juice (optional)

  • 2 tangerines or mandarin oranges - peeled, plus a pinch of zest --- alternative: use 1/2 cup juice of either orange or lemon (lemon will make for a sweet-tart flavor)
  • 1/2 cup of the cashew puree
  • 1/4 cup virgin coconut oil, melted
  • 1 1/2 cups blackberries (fresh or frozen and thawed)
  • 1/3 cup non-dairy milk, room temperature (optional to thin our puree if desired)
  • crust: I used a simple "non-crust" of 1/3 cup hemp seeds sprinkled over the parchment paper
