  • 250 g (1/2 lb) all purpose GF flour mix*
  • pinch salt
  • 175 g eggs (about 3 - 4 eggs), beaten
  • olive oil
  • 1 chicken, roasted, or 1 kg (2 lbs) of your favorite poultry cuts, cooked how you like, chopped into bite size pieces
  • 50 g (2 oz.) butter
  • 50 g (2 oz.) all purpose GF flour mix*
  • 1 onion, diced
  • 1 clove garlic, minced
  • a couple spoonfuls of pumpkin puree
  • salt & pepper
  • 2 cups (500 mL) chicken broth, room temp or slightly heated (not chilled)
  • 4 oz. parmesan, grated
  • fresh thyme

  • 1 tsp garam masala
  • 1/2 cup yogurt (any fat % is fine)
  • 1 1/2 tsp lemon juice
  • 1/2 tsp red food color (optional)
  • Salt
  • 1 14.5 oz can of diced tomatoes (pureed)
  • 1 tbsp garlic paste (I prefer fresh but you can use store bought too)
  • 1 tbsp ginger paste
  • 1 tbsp onion powder (optional)
  • 1 tbsp coriander powder
  • 1 1/2 tsp powdered black pepper
  • 1 tsp powdered fennel seeds
  • 1/2 cup heavy cream
  • 1 1/2 tbsp olive oil
  • 1 tsp chopped cilantro (for garnish)
  • 1 tbsp clarified butter or ghee (You can also use olive oil)
  • 1 bay leaf

  • 1 medium size bottle gourd or squash (grated and water drained)
  • 2 tsp fennel seeds
  • 2 tsp coriander seeds
  • 1 tsp red pepper flakes
  • Corn flour to bind everything together to be turned into smaller balls later
  • Salt to taste
  • Oil for deep frying
  • 1 big bay leaf
  • 2 black cardamom
  • 3-4 cloves
  • 1 tsp cinnamon powder
  • 3-4 count peppercorn
  • 1 1/2 tsp cumin seeds
  • Or instead of the 6 ingredients above, you can use a tablespoon of garam masala.
  • 1 cup onion paste
  • 2 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 green chili
  • 1 cup tomato puree

  • 1 pound boneless chicken cut into 1-2 inch thickness (I used both thighs and breasts)
  • 1 cup whole fat yogurt (You can use low fat yogurt too if you want but I just wanted a creamy rich sauce)
  • 3 tbsp ginger garlic paste
  • 1 cup onion paste
  • 1 tbsp Kashmiri red pepper powder (You can find it in any Indian/International store. But If you still can't find it, just use 1/2 tbsp red pepper powder)
  • 1 tsp turmeric
  • 1 tsp fennel seeds
  • 2-3 cloves
  • 1 tsp cinnamon powder
  • 1 tsp cumin seeds
  • a pinch of asefetida
  • 1 tsp Madras curry (Or you can even use garam masala)
  • 2 tbsp oil + 1 tbsp clarified butter
  • salt
  • 1 1/2 cups of basmati rice
  • 1/2 cup sundried tomatoes
  • 2 sticks of cinnamon
  • 1 tbsp olive oil + 1 tsp butter

  • 4-5 cherry tomatoes (sliced into halves)
  • 1 tsp cayenne pepper
  • 2 cups of cilantro
  • 1 cup tomatoes
  • 2-3 green chili or jalapenos (seed them if you dont want it very hot)
  • 2-3 cloves of garlic
  • 1 tbsp lemon/lime juice (optional)

  • 1/2 cup grated coconut
  • 1 cup chopped onion
  • Red pepper- 1-2 tsp ( according to heat you can take)
  • Peppercorn- 12-25 no.

  • 1 inch ginger

  • 2 cups coconut milk ( this much would be good for both the paste as well as the gravy)
  • turmeric- 1 tsp
  • 3 cups chicken cubes ( I used only breast but that's because that was available, you can use any part )
  • 1 cup thinly sliced onion
  • 1 tbsp curry powder
  • a small bunch of curry leaves
  • 3 tbsp olive oil
  • tomato paste- 2 tbsp ( I didn't have it handy so I just pureed half tomato and used that instead)

  • 6 chicken drumsticks
  • 2 tbsp coriander powder
  • 1 tsp cayenne pepper

  • 1 tsp tandoor masala (optional)
  • 1 tsp garlic powder or you can also use 1 tsp garlic paste
  • 1 tsp ginger powder or you can also use 1 tsp ginger paste
  • 1 tsp cumin powder
  • juice of one lime
  • 2 tbsp yogurt ( I used whole milk creamy yogurt firstly because I had some in the fridge and it also gives the chicken some richness. If you don't have whole milk yogurt just add a tsp of extra virgin olive oil)
  • Salt to taste.
  • 1 cup finely chopped cucumber (peeled preferably)
  • 1/2 cup non fat yogurt
  • 1/2 tsp sugar

  • 1 whole chicken. We have a small family so I used a small Cornish hen weighing about a pound pound n a half instead of a big 3-4 pounder chicken. You can double the amount of the ingredients according to the size of the chicken.
  • 1/2 cup chopped onion

  • 1 tsp ginger paste
  • 1/2 cup tomato pureed
  • 1 tbsp tomato ketchup
  • 1 tbsp curry powder ( In case you are intrested in the real deal you can make curry powder at home too. Nothing it the whole world can beat fresh curry powder made with whole spices made at home. Will post the method in my blog soon!)

Red Velvet Cake With A Twist from Indian Simmer
  • 2 1/2 cups of all purpose flour
  • 1 1/2 cups of vegetable oil. Again you can use unsalted butter if you like. I had oil handy so I used that.
  • 1 1/2 cups of powdered sugar
  • 1 teaspoon each of baking soda, baking powder, salt, white vinegar, vanilla extract and cocoa powder. Now if you have apple cider vinegar at home you can use that too, I prefer white.
  • 2 eggs. Its important that the eggs are at room temperature because then they mix well in the batter and help making the cake soft.
  • 1 tablespoon red food color. I just added lesser red color to make my cake pink. If you want it super red just add 2 TBSP of color.
  • 1 cup buttermilk
  • For the frosting youll need a pound of cream cheese
  • I dont like my frosting to be very sweet so I used a cup of confectioners suger. If you like it sweet you can use about 3-4 cups
  • 1 teaspoon good vanilla extract and 1/2 a cup of unsalted butter. Again I like the frosting to be very light but if you don

  • 1/4 cups oil
  • 1/4 cup raisins (I used golden raisins but you can use black raisins)
  • 3 1/2 tbsp tomato puree

  • 1 (16oz) cup heavy cream
  • 1 (14 oz) can of evaporated milk. If you want you can use low fat.
  • 1 (14 oz) can of condensed milk
  • 8-10 strands of saffron (It is sort of a culinary jewel and I would say a must in kulfi which you can find it in any Indian/international store. I would say buy mexican saffron, they are cheaper than the high quality Indian ones.)
  • 5-6 cardamom pods
  • 2 tbsp sugar
  • 1 16 oz box of cool whipped topping (fat free)
  • 1/2 cup coarsely crushed nuts ( I used pistachios but you can also add almonds, cashews. And you can powder it all if you want as well I like it when I can get them in small bites )
  • 9 tablespoons rosesyrup
  • 3 ounces vermicelli
