Summer Garden Frittata Recipe from Pamela Salzman
  • 2 Tablespoons unrefined, cold-pressed extra-virgin olive oil + additional
  • 1 bunch scallions, trimmed and sliced
  • 3 cloves garlic, sliced thinly
  • 3 medium zucchini (about 1 pound), ends trimmed and sliced thinly by hand or by the slicing disk of the food processor
  • Fine grain sea salt
  • Freshly ground black pepper
  • 8 large eggs
  • ¼ cup chopped fresh basil leaves
  • ½ cup ricotta cheese or goat cheese or feta (optional, but I used feta in the photographs)
  • 5-6 zucchini blossoms (optional, I used 4 large ones)
  • ½ cup cherry tomatoes or 2 Roma tomatoes, sliced

  • 1/2 cup uncooked quinoa
  • 1 cup low sodium vegetable stock (or water!)
  • 7 thin stalks asparagus, sliced diagonally into bite-sized pieces
  • 1/4 cup diced red onion
  • 1/2 cup diced sweet bell peppers (any color)
  • 1/2 cup halved cherry tomatoes
  • 5 artichoke hearts, rinsed, drained, and halved (or quartered if larger)
  • 1 tablespoon chopped parsley (plus additional to garnish, if desired)
  • 1 1/2 cups cooked chickpeas, rinsed and drained
  • 1 teaspoon pesto
  • 1 tablespoon balsamic vinegar
  • Sea salt and black pepper, to taste

  • 1 package of frozen puff pastry, thawed and soft to the touch
  • 2 tbsp butter
  • 1 small onion, finely minced
  • ¼ cup white wine (optional)
  • 2 tbsp flour
  • 3-4 carrots, peeled and chopped
  • 1 cup of frozen peas
  • ½ cup chicken stock
  • 1 jar alfredo sauce
  • 2 ½ – 3 ½ cups shredded chicken (great use for leftover roast chickens, but you can also use a store-bought rotisserie)
  • 1 tsp dried tarragon
  • 1 egg, lightly beaten, with drip of water, for wash
