  • About 1 cup confectioners' sugar
  • 3 1/2 envelopes (2 tablespoons plus 2 1/2 teaspoons) unflavored gelatin
  • 1 cup cold water, divided
  • 2 cups granulated sugar (cane sugar worked just fine)
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 2 large egg whites or reconstituted powdered egg whites
  • 1 tablespoon vanilla (alternately: 1/2 of a scraped vanilla bean, 2 teaspoons almond or mint extract or maybe even some food coloring for tinting)

Fluffy Vanilla Marshmallows from The Kitchn
  • 3 tablespoons (usually 3 packets) unflavored gelatin powder
  • 1/2 cup + 2 tablespoons cold water
  • 1 1/2 tablespoons vanilla extract
  • 3/4 cup water
  • 1 1/4 cup sugar cane syrup or corn syrup
  • pinch salt
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups powdered sugar
  • 1/2 cup cornstarch
  • hand mixers work just fine for this recipe. and you also don't need to let the marshmallows set for that long.
  • 12-15 hours is precious tim wasted when you could be noshing!
  • 3 hours is just long enough.
