  • 12-15 lasagna noodles, cooked a few minutes shy of al dente (noodles will continue to cook in the oven, so be sure to leave a little crunch when boiling them)

  • 4 Cups cooked Quinoa, approx 2 cups uncooked. Follow directions on box or for every cup of quinoa boil with 1 ½ cups water
  • 1 teaspoon sea salt
  • 3 T olive oil
  • 3 T Balsamic Vinegar
  • ¼ C feta cheese
  • ¼ C Fresh Mint leaves
  • ½ red onion, thinly sliced
  • ½ bunch radish, thinly sliced
  • 1/2 C dried cranberries, optional (but so so deelish and sexy)

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cake flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ stick (1/4 cup) cold unsalted butter, cut into small pieces
  • 1 ½ cups fresh raspberries (this is interchangeable with blueberries, dried cranberries, currants, apple slices etc)
  • 3/4 cup low-fat buttermilk
  • 1 large egg, plus 1 large egg yolk beaten for egg wash
  • Zest from one Lemon
  • 2 tablespoons lemon juice
  • ¼ cup sugar in the raw, for sprinkles on top
