• 1/4 cup Olive Oil
• 1 x Yellow onion, medium dice
• 1 x Leek, sliced into 1/4 moons
• 1 x fennel bulb, medium dice
• red pepper flakes

• 3 Tbsps sherry vinegar
• 1/4 cup honey
