  • 1 small head of cauliflower (about 1 ¼ pounds), cut into large florets
  • pinch of sea salt
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Pinch crushed red pepper flakes
  • ¼ cup grated parmesan or pecorino-romano cheese
  • ¼ cup shredded mozzarella cheese
  • 1 Tablespoon almond meal/flour (optional, but I think it makes the crust a little “breadier”)
  • 2 egg whites, lightly beaten with a fork (1 whole egg works, too. I think 2 egg whites makes the crust just a little crispier.)
  • Desired accompaniments: marinara sauce, shredded mozzarella cheese

  • 1 ½ cups cooked black beans, drained and rinsed if canned (1 can)
  • 1 ½ cups fresh or cooked corn (cut from 2 large ears)
  • ¾ cup diced red pepper (1 small pepper or ½ large)
  • ½ large red onion, diced (soaked in ice water if you want to cut the harsh onion flavor)
  • 1 jalapeno, seeded and minced (optional)
  • ¼ cup finely chopped cilantro
  • 1 teaspoon sea salt
  • ¾ teaspoon ground cumin
  • 1/3 cup fresh lime juice (about 1 ½ limes)
  • 1/3 cup unrefined, extra-virgin olive oil

  • 4 cups low sodium vegetable broth
  • 1 1/2 tsp. tumeric OR curry powder
  • 2 tsp. dried thyme or 1 Tbsp fresh thyme leaves
  • 1 Tbsp. coconut oil
  • 1 large yellow onion, diced
  • 2 stalks lemongrass, outer layer removed, lower portion finely minced
  • 1 tsp. sea salt, plus more to taste
  • 1/2 tsp. cardamom
  • 1/2 tsp. cinnamon pinch of red pepper flakes to taste
  • pinch of fresh grated nutmeg
  • 1 1/4 cup coconut milk (use full fat, just believe me)
  • 3 Tbsp. lemon, lime or orange juice

  • 2 cups all purpose flour or wheat flour
  • 1/2 cup of warm milk
  • 1/2 cup of yogurt
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tbsp sugar
  • 1/2 tbsp oil
  • 1 medium size bottle gourd or squash (grated and water drained)
  • 2 tsp fennel seeds
  • 2 tsp coriander seeds
  • 1 tsp red pepper flakes
  • Corn flour to bind everything together to be turned into smaller balls later
  • Salt to taste
  • Oil for deep frying
  • 1 big bay leaf
  • 2 black cardamom
  • 3-4 cloves
  • 1 tsp cinnamon powder
  • 3-4 count peppercorn
  • 1 1/2 tsp cumin seeds
  • Or instead of the 6 ingredients above, you can use a tablespoon of garam masala.
  • 1 cup onion paste
  • 2 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 green chili
  • 1 cup tomato puree
  • 2 1/2 tsp coriander powder
  • 1 tsp turmeric
  • 1/4 cup low fat cottage cheese
  • 6-8 cashews
  • 3 tbsp milk
  • 1/4 cup olive oil
