  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 8 ounces orzo, a rice-shaped pasta, rinsed
  • 1 teaspoon tomato paste
  • 1 1/2 cups vegetable stock
  • 1 to 3 tablespoons fresh oregano, chopped
  • 1 teaspoon grated lemon zest or more to taste, up to the zest of a whole lemon
  • 4 ounces mozzarella, firmer is better here, cut into 1/3-inch dice
  • 1 1/2 ounces (a generous 1/2 cup) parmesan, grated
  • 3 medium tomatoes, diced

  • 2 tablespoons lime juice (half a juicy lime)
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • 1 garlic clove, minced or pressed
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Few dashes hot sauce, optional
  • 8 (6-inch) flour or corn tortillas
  • Olive oil
  • 2 large bell peppers, cut into thin strips (I use a mix of green, red and other colors, if I can find them)
  • 1 large yellow or sweet onion, halved and sliced thin
  • Coarse salt
  • 1 1/2 cup cooked black beans (1 15-ounce can, drained and rinsed)
  • Salsa or pico de gallo
  • Sliced avocado or guacamole
  • Shredded cheese or sour cream
  • Minced white onion or pickled red onions
