Chestnut Trofie With Creamy Porcini Sauce from Traveler's Lunchbox
  • 2 1/2 cup all-purpose flour, plus more as needed
  • 1 1/2 cup chestnut flour
  • 1 tsp fine sea salt
  • 5 large large eggs, at room temperature
  • 1 tbsp olive oil
  • 1 oz dried porcini mushrooms
  • 1 cup hot water
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 125 ml dry Marsala or dry sherry
  • 1 tbsp minced fresh rosemary
  • 1 cup chicken stock
  • 1 cup heavy cream
  • salt and pepper
  • freshly grated parmesan cheese, for serving
