  • 8 Persian cucumbers (about 4 cups) skin on, chopped (you can use 3 regular cukes, but you must scrape the seeds from those..)
  • 2 small red onions, chopped (about 3 cups)
  • 2 large red bell peppers, chopped
  • 1 large, fresh Peperoncini or Hungarian Pepper (You’ll recognize them when you see them. If unavailable, use another red bell pepper, instead.)
  • 1 fresh jalapeno, minced
  • 2 T fresh garlic, minced
  • 2 large stalks celery, fine chop
  • 6 cups chopped fresh tomatoes (I buy medium vine ripened if there’s nothing ready in the garden)
  • 1/2 cup seasoned rice wine vinegar
  • 1 46-oz bottle plain tomato juice (not V-8!)
  • 2-3 t kosher salt (amount will vary depending on saltiness of the tomato juice you buy)

  • 2 skinless chicken breast filets, sliced very thin (Don’t worry if you’re using frozen. Once you slice them into skinny strips, they’ll thaw by the time you need them.)
  • 2 medium onions, sliced
  • 2 T fresh garlic, minced
  • 6 ozs fresh mushrooms, sliced thin (I prefer Shiitakes for their chewy texture, but if they’re too pricey, you can use brown mushrooms instead.)
  • 2 bell peppers (red, yellow, or green.. or a mix.)
  • 1 large poblano pepper, sliced very thin
  • 1 Anaheim pepper, sliced very thin (Anaheim and poblano peppers have tough skins so it’s important to slice them extra thin.)
  • 3 vine ripened tomatoes, cut into small wedges
  • 1 package store bought fajita or taco seasoning
  • 4-6 green onions, chopped
  • salt and pepper to taste

  • 3 cups chopped onion (about 2 medium)
  • 1.5 lbs chopped boneless, skinless chicken thighs chopped into 1-inch pieces
  • 2 cups chopped red bell pepper (one large or 2 small)
  • 2 cups chopped green bell pepper (one large or 2 small)
  • 2 cups chopped celery
  • 4 cups butternut squash (one small) chopped into 1 inch cubes
  • 6 cups chopped cauliflower (one small head)
  • 5 cups frozen sliced okra (separated in half)
  • 1 can (bout 2 cups) garbanzo beans
  • 1 28 oz can of chopped tomatoes with juice
  • 8 cups chicken broth

  • 1 t salt, divided (half for quinoa, half for cauliflower)
  • 1/2 c minced herbs (I use a mix of dill, mint, cilantro and parsley)
  • zest and juice of one large or 2 small lemons
  • 1 bunch asparagus, ends snapped and cut into 2 inch pieces, tips kept separately
  • 2 T chicken broth
  • 1-2 T minced garlic (matter of taste, add more or less)
  • 2 c frozen peas (Pull from the freezer and let thaw a bit before you start cooking.)
  • 1-2 c grape or cherry tomatoes, sliced (Salt and pepper them before adding to the dish.)
  • 1/2 c green onions, chopped (optional)
  • 1/4 c grated Parmigiano reggiano (the good stuff) or crumbled Feta (optional)
  • Sprinkle of pine nuts (optional)

  • 1 carrot, diced
  • 1 T. dried Oregano
  • 1 T. ground cumin
  • 1 T. minced garlic
  • 2 cans “Rotel” tomatoes with chilis
  • 1 can black beans
  • 1 cup frozen corn
  • 1 cup sliced frozen okra (not traditional, but it adds more calorie free fiber and richness)
  • 8 cups beef broth
  • 1/2 cups green onion, chopped
  • 1/2 cup fresh cilantro, chopped
  • Fat-free sour cream, a bit of fresh avocado and a few skinny tortilla strips to add to bowl when serving

  • 1 cup capers, rinsed (Note: capers come in 2 sizes, if you only find the large ones, chop them a bit..)
  • 2 T fresh dill, minced
  • 2 T Raspberry Vinegar (you can also use White Balsamic or Rice Vinegar, but Raspberry is best)

  • 2 T Low Fat Mayo or Reduced Fat Vegenaise
  • 2 T jarred cocktail sauce (If you don’t have cocktail sauce, you can fake it by using 2 T ketchup mixed with 3 t prepared horseradish sauce.)
  • 2 t Dijon Mustard
  • 2 t fresh lemon juice
  • 3-4 T freshly snipped chives
  • 1 pint cherry or grape tomatoes, diced
  • 3 Persian cucumbers, skin on, diced (Persian cukes have much less water than English or Garden Cukes and, as you can see, there is no reason to remove the seeds…they’re tiny and soft.)
  • 1 shallot, minced
  • 2 t good olive oil
  • 1 T Seasoned Rice Wine Vinegar
  • 1 large avocado, sliced into thin strips OR, if you want to reduce calories even more, roasted red bell pepper strips. (You can roast your own, making sure you peel them, or use the ones that come in a jar.)

  • 2 Tbsps cucumber, peeled, seeded, and finely diced
  • 1 Tbsp minced red onion
  • 1 Tbsp minced garlic
  • Pinch of Cayenne pepper
  • Kosher Salt
  • Freshly ground black pepper
  • 1 romaine heart, torn into bite-size pieces
  • 4 cups mixed baby lettuces washed and dried
  • 1/2 cup each red and yellow bell peppers cored, seeded, trimmed, and cut into 1-inch cubes
  • 1/2 cup Caramelized Onions
  • 1/2 cup Kalamata olives, pitted
  • 1 small cucumber, peeled, seeded, quartered, cut into 1/2- inch slices
  • 1 cup yellow pear and sweet 100 cherry tomatoes, cut in halves
  • 1/2 cup freshly grated parmesan cheese
  • 1 cup crumbled feta cheese
  • 1 cup Greek Salad Dressing
  • 16 large shrimp, peeled, deveined, cut in half horizontally, blanched
  • 1/4 cup toasted pine nuts*
  • Sprigs of fresh dill
  • *To toast pine nuts, place the nuts in a small skillet in a single layer. Over low heat, toast until lightly golden, stirring often to prevent burning. This takes 3 or 4 minutes. Drain on paper towels.

  • 1/2 lb fresh (not dried) Shiitake mushrooms
  • 1 lb Broccolini, (Rinse well just before cooking so a little water is clinging on.)
  • 2 T cornstarch
  • 1/4 c water (you’ll add more while cooking to make more sauce, but start with this)
  • 1/4 c Tamari or Soy Sauce (Tamari is wheat free Soy Sauce, use that if you want to stay gluten free)
  • 2 T Thai Sweet Chili Sauce
  • 1 T Oyster Flavored Sauce
  • 2 T Seasoned Rice Wine Vinegar
  • 2 T minced garlic
  • 2 T minced ginger
