Divina Cucina's Peperonata from SF Gate
  • 3 Tbsps extra virgin olive oil or as desired
  • 6 large bell peppers, a combination of red, yellow and green, cut into 1-inch wide strips
  • 4 large red onions, cut into the same size pieces as the peppers
  • -- Kosher salt to taste
  • 2 Tbsps sugar
  • 3 Tbsps red wine vinegar
  • -- Sprigs of fresh thyme, leaves of marjoram or basil (optional)
  • 4 Tbsps capers
