  • 1 stalk celery, washed, trimmed, thinly sliced
  • 1/2 cup finely chopped shallot
  • 3 tablespoons olive oil
  • 1 tablespoon capers, drained (optional)
  • 2 teaspoons white wine vinegar
  • Zest of 1/2 a lemon
  • Juice of 1/2 a lemon, plus more to taste
  • Salt and freshly ground pepper, to taste
  • Parsley, chopped, for garnish (optional)
  • Toasted bread or arugula, for serving (optional)
