  • 1 carrot, finely chopped into 1⁄4 inch pieces
  • 1 celery rib, chopped into 1⁄4 inch pieces
  • 1 garlic clove, finely chopped
  • 1 yam (orange sweet potato), cut into 1⁄2 inch pieces
  • 1 russet potato, cut into 1⁄2 inch pieces
  • 1 lb black kale (dinosaur or lacinato, not curly kale), bottom stems removed, cut into 1⁄4 inch slices
  • 1⁄2 lb swiss chard (green variety, not red), cut into 1⁄4 inch slices

  • 3 tbsp Light Soy Sauce
  • 4 tsp Dark Soy Sauce
  • 2 tbsp Caster Sugar (superfine sugar)
  • 16 x spring onions, cut into segments 3cm long
  • Jasmine Rice for serving
