  • 2 cloves garlic, minced
  • 1″ knob of fresh ginger, minced
  • 3 cups chopped spring veggies such as snap peas, broccoli, peas (frozen or fresh), carrots, asparagus
  • 3 cups leftover white or brown rice
  • Salt
  • Hot sauce, such as sriracha, for serving (optional)
  • 2-3 scallions, chopped, for garnish (optional)
  • Toasted or black sesame seeds, for garnish (optional)

  • 7 ozs canned sustainable tuna in olive oil, drained
  • 1 Tbsp salted capers, rinsed
  • splash of white wine vinegar
  • squeeze of lemon juice
  • 3 Tbsps olive oil
  • 2 Tbsps capers, rinsed and dried
