Hearty Potato & Cheddar With Bacon Soup from Wolfgang Puck

• 1/4 lb smoked sliced bacon, coarsely chopped
• 1/4 cup butter
• 2 small leeks, trimmed, chopped
• 1 large onion, chopped
• 1 carrot, peeled, chopped
• 1 clove garlic, minced
• 1/2 cup flour
• 6 cups Wolfgang Puck® Free Range Roasted Chicken Stock
• 3 lbs Idaho potatoes, peeled, cut into 1/2-inch cubes
• 1 lb Vermont Sharp Cheddar cheese, grated
• 1/3 tsp salt
• 1/4 tsp fresh ground pepper
• 1 cup heavy cream

• 1/2 tsp salt
• 2 cups swiss cheese, shredded (8 oz)
• 6 green onions , chopped
• 1 lb fresh broccoli , cleaned, cut into spears
• 8 ozs wide egg noodles, cooked and drained
• 1/4 tsp pepper
• 1/2 cup fresh mushrooms , chopped
• 1/2 cup milk
• 1 lb kielbasa or smoked sausage , cut into bite size pieces
• 1/8 cup fresh parsley , chopped
• 6 medium red potatoes, quartered
• 3 large carrots , cleaned, peeled, cut into 1 1/2 inch pieces
• 1 Tbsp horseradish
• 2 Tbsps butter
