  • Hefty Pinch of Dried or Fresh Thyme

  • 2/3 Cup Breadcrumbs (fresh or panko, preferably)

  • Zest and Juice of one Meyer Lemon

  • 1 butternut squash
  • 100 g raw hazelnuts
  • 2 avocados, diced
  • 1 small romanesco broccoli, broke into bite-size florets
  • 2 handfuls purple grapes, cut in half
  • 2 handfuls green leaves, we used beetroot leaves
  • 1 pomegranate, seeds
  • 1 handful basil, finely chopped
  • 1 handful parsley, finely chopped
  • 2 cloves garlic, very finely chopped
  • 1/2 lemon, juice
  • 3-4 tbsp extra virgin olive oil

  • 1 cup finely grated sweet potato (this is a secret ingredient, it holds the batter together)
  • 1 (10-oz) box frozen chopped spinach, thawed squeeeeezed-dry
  • ½ cup chopped nuts (pine nuts, walnuts or your very favorite nuts), optional
  • ½ cup chopped sun dried tomatoes
  • 4 ozs crumbled feta cheese
  • 2 Tbsps chopped parsley, dill or cilantro
  • 1 tsp salt
  • Black pepper, cumin and/ or cayenne to taste
  • Vegetable or grape seed oil
  • 1 ½ cup drained fire roasted red peppers from a jar
  • ½ cup toasted almonds
  • 2 tsps red wine vinegar
