  • 2 teaspoons ground cumin
  • 1/2 teaspoon ground cayenne pepper (I used a quarter of this because my cayenne is extremely hot)
  • 1 teaspoon ground turmeric
  • 2 teaspoons cumin seeds, toasted and ground
  • 1 tablespoon amchoor powder (see note)
  • 2 teaspoons paprika
  • 1 teaspoon garam masala
  • 2 cups tomatoes, chopped small or 1 15-ounce can of whole tomatoes with their juices, chopped small
  • 2/3 cup water
  • 4 cups cooked chickpeas or 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1/2 teaspoon salt
  • 1/2 lemon (juiced) (see note; I used a whole lemon to swap for the amchoor powder)

  • 1 heaping tablespoon minced fresh ginger
  • 1/4 cup finely chopped fresh cilantro
  • 3 lbs tomatoes, diced
  • Fresh black pepper
  • 1 teaspoon salt
  • 3 1/2 cups cooked chickpeas (or two cans, rinsed and drained)
  • 1 teaspoon agave

  • 2 yellow onions, chopped
  • 2 large bell peppers (red, green or both), chopped
  • 3-4 stalks of celery, including leaves
  • 2 fennel bulbs, cored and chopped or sliced
  • 2 T garlic, chopped
  • 2 T dried oregano
  • 1 T dried red pepper flakes
  • 1 pound brown button mushrooms, sliced
  • A bundle of fresh thyme and parsley, tied with twine (If you don’t have fresh thyme, you can substitute 1 teaspoon of dried thyme. But don’t bother with dried parsley, it has no real flavor.)
  • 1/2 c extra dry vermouth (You can use white wine, but vermouth is better.)
  • 1 28 ounce can crushed tomatoes with basil
  • 1 28 ounce can diced tomatoes with juice (For a little more depth of flavor, try the fire roasted variety.)
  • 6 cups good quality seafood broth OR substitute 6 cups chicken broth mixed with
  • 2 t of anchovy paste
  • 2-3 pounds fresh seafood, a mix of boneless white fish filets and shellfish works best (Here I’ve used 2 pounds of cod filets, a 1/2 pound of raw, peeled, whole shrimp and a 1/2 pound of calamari (squid) cut into rings…but I’ve also used halibut, haddock
  • 1 10-ounce can of whole baby clams with juice
  • 1/2 c fresh basil, chopped
  • 1/2 c fresh parsley, chopped
  • 1/4 c feathery fennel fronds, chopped (optional)

  • 2 medium yellow onions, halved and thinly sliced
  • 3 cloves of garlic, peeled and minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika or sumac
  • 1/2 teaspoon cayenne, spoonful of harissa or a couple shakes of your favorite hot sauce (all adjusted to your heat preference)
  • Few gratings fresh lemon zest
  • 2 teaspoons coarse sea or kosher salt (what I used for lightly salted broth, use more for unsalted, less for salted or canned beans)
  • 4 cups vegetable broth (for dried but soaked chickpeas), 1 1/2 cups vegetable broth (for cooked chickpeas)
  • 1 cup or more of water (will likely only need if beans weren’t pre-soaked)
  • Fresh pitas for pita chips
  • Big handful of parsley (or a mix of parsley, cilantro and mint would be good too)
  • 1/4 cup pine nuts
  • Tomato-cucumber “relish” salad
  • Lemon-tahini yogurt or plain yogurt
  • Additional paprika or sumac for sprinkling
