Lemon Cheesecake With Fresh Berries from My Baking Addiction

• 2 cups graham cracker crumbs
• 1 stick unsalted butter; melted
• 3 Tbsps sugar
• ½ tsp salt
• 4 sticks of cream cheese, 8 oz each; room temperature
• 1 ¼ cup granulated sugar
• 4 large eggs; room temperature
• 3/4 cup heavy cream
• zest of two lemons
• 1 Tbsp pure vanilla extract
• 2 cups of fresh berries
• ¼ cup apricot preserves plus 1 tables spoon hot water

• 2 medium tomatoes, seeded and chopped
• 1 large cucumber, peeled and thinly sliced into half moons
• 4 green onions, thinly sliced
• 1/3 cup firmly packed fresh mint leaves, chopped
• 1/3 cup firmly packed fresh cilantro leaves, chopped
• 1/4 cup fresh lime juice
• 2 Tbsps canola oil
• 1 tsp sugar
• 1 tsp salt
• 1/2 tsp dried crushed red pepper
• 1/4 cup chopped peanuts
