  • 1 pound ground beef (85-90% lean)

  • 1 small russet potato, peeled, finely diced, and boiled (I used 2 yukon golds)
  • 3 scallions, trimmed and chopped

  • 1 cup Frozen Corn
  • 2 tsp Chili Powder
  • 1 tsp cumin seeds
  • 1 tsp salt
  • 1/2 cup Cheese , shredded and divided - we like monterey jack
  • 32 oz Salsa
  • 6"-8" 12 Tortilla, flour or corn
  • 1 cup leftover meat - chicken, pork, hamburger, or shredded beef - optional
  • 16 oz Black Bean, drained and rinsed
