Little Gem Lettuce With House Caesar Dressing from Bijouxs
  • 3 whole cloves of garlic, crushed
  • 1/2 cup extra virgin olive oil
  • 1/2 sourdough baguette, cut into 1/2 cubes (about 1 1/2 cups)
  • 1 tin anchovy fillets in olive oil (2 oz)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 3 tablespoons Champagne vinegar
  • Juice of 1 large lemon (about 2 tablespoons)
  • 4 heads of Little Gem or small romaine lettuce, sliced in half
  • 1/4 cup freshly grated Parmesan cheese, plus extra for serving
  • Freshly ground black pepper
  • Maldon or flaked sea salt for finishing
