Tarah Gumucio's Potato And Carrot Cakes from Buddy Valastro - Cake Boss

• 1 medium potato, peeled and grated on the large holes of a box grater, about 1 cup
• 2-3 medium carrots, peeled and grated on the large holes of a box grater, about 1 cup
• 1 small red onion, peeled and grated
• 2 cloves of garlic, grated finely
• 1 cup white cheddar cheese
• 2 large eggs
• 1/4 cup flour
• 1 Tbsp paprika
• 2 tsps seasoning salt
• 1/2 tsp pepper
• Olive oil for shallow frying
