2 tablespoons vegetable oil

salt and pepper

16 stalks lemongrass

3 kaffir lime leaves (double leaf, thinly sliced)

2 tablespoons tamari soy sauce

1 teaspoon turmeric

2 teaspoons hot chili sauce or chili paste (such as sambal oelek or sriracha)

1 cup smooth peanut butter

1 inch gingerroot , chopped

1/4 cup unseasoned rice vinegar


1/2 cup fresh cilantro , chopped

6 garlic cloves , peeled

1/2 cup unsweetened dried shredded coconut


1/2 cup low sodium chicken broth
