4 small pears, peeled, halved and cored, drizzled with lime juice

3 tbsp blond cane sugar

1/2 x vanilla bean, split open and seeds scraped out

1 inch ginger root, peeled and finely grated

1 inch lemongrass stick, finely grated

2 tbsp unsalted butter

2-3 tbsp coconut milk

1 tbsp lime juice

Chopped unsalted green pistachios, to serve
