Ingredients for 6 servings

1 tbsp good olive oil

8 ounces thickly sliced pancetta

3 pounds chuck beef, trimmed of fat and silverskin, cut into 1 1/2 to 2 inch cubes

Kosher salt and freshly ground black pepper, to taste

2 cup Beef Broth, homemade or organic in a carton

1 pound Carrots, thickly sliced

2 x yellow onions, sliced

1 tbsp fresh thyme leaves

2 tsp chopped garlic, 3 cloves

1/2 cup Cognac

1 bottle good dry red wine such as Cote du Rhone or Pinot Noir

1 tbsp Tomato Paste

2 x Bay Leaves

2 tbsp TO THICKEN --- unsalted butter at room temperature

3 tbsp All Purpose Flour

1 pound FOR THE ROASTED MUSHROOMS AND PEARLY ONIONS --- peeled pearl onions, tip and root end sliced off

1 pound Crimini Mushrooms, wiped clean with a damp cloth and sliced in half

2 tbsp fresh thyme

Olive Oil

Kosher salt and freshly ground pepper, to taste

TO SERVE ---- Italian parsley, chopped
