Ingredients for 10 servings

1 pound ground buffalo meat

3/4 pound ground beef chuck

1 large onion, diced

3 cloves garlic, minced

1 14.5- oz can of tomato sauce

1 10-oz can diced tomatoes with green chilies + juice

1 8-oz can tomato sauce

1 New Mexican dried red chile pod, soaked in hot water and then processed to a puree

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon Mexican oregano

2 tablespoons chili

1 teaspoon brown sugar

1/2 teaspoon cinnamon

1/2 teaspoon all spice

1 bay leaf

1 12-oz bottle Duck-Rabbit Milk Stout

2 heaped tablespoons tomato paste

2 cans white beans (or pintos or black beans), drained and rinsed

Salt and pepper, to taste

queso fresco or cheddar cheese, shredded

green onion, minced

sour cream

tortilla chips or cornbread
