50 g dried bean thread noodles

small handful of dried black fungus

small tablespoon red curry paste

1/4 tsp ground turmeric

1/4 x chili flakes

1 tbsp fish sauce

3 - 4 tbsp chicken stock

1 tbsp water

1 tsp sugar

1 tbsp oil for frying

1 x finely chopped garlic clove

1/2 x red onion (half finely chopped and half cut into wedges)

1 handful mushrooms

1 x lemongrass stem (white part only), finely chopped

180 g entrecote steak (eye fillet) finely sliced

4 - 5 tbsp coconut milk

small handful of roasted peanuts

1 bunch herbs like mint, basil, perilla or sawtooth herb

1 x birds eye chili mixed with soy sauce for dipping
