Um, you might want to take the vegan label off of these, seeing as how they have eggs in them and all. I wouldn't have said anything, but I don't know if they would turn out right replacing the egg with something like flaxseed meal. If someone knows of a way to make these eggless, put it on here, because these look delicious!

Ingredients

2 pounds medium zucchini, about 6, ends trimmed

1 ½ pounds Russet potatoes, about 2, peeled or unpeeled, and cut to fit a food processor

2 medium yellow onions, peeled and quartered

3 large eggs, lightly beaten

1 Tablespoon sea salt

A few grinds of black pepper

½ – ¾ cup panko bread crumbs or matzo meal

Olive oil for frying (or a refined peanut oil or grapeseed oil has a higher smoke point, although not exactly healthful)
