½ teaspoon baking soda

½ teaspoon salt

¼ cup chocolate chips

¾ cup white sugar

1 teaspoon vanilla

1 egg

1 cup flour (sifted, all-purpose)

¼ cup Dutch-processed cocoa

½ teaspoon soda

¼ cup buttermilk or sour milk (1% or 2% milk combined with a teaspoon of white vinegar added works well)

¼ boiling water

1 ½ cup white sugar

6 egg whites

2 ¼ cups flour (sifted, all-purpose)

1 ½ teaspoon baking powder

¾ teaspoon salt

3 tablespoons milk

1 ½ teaspoons instant espresso powder

1 tablespoon boiling water

2 cups sifted icing sugar

3 squares semi-sweet baking chocolate

2 egg whites

1 ½ cups brown sugar

5 tablespoons cold water

1 teaspoon baking powder
