Ingredients

2 tablespoons olive oil

1 1/2 pounds lean beef (such as top round, London broil or flank steak), sliced into 1/4-inch-thick pieces

1 teaspoon sea salt

1/2 teaspoon black pepper

Cayenne pepper (optional)

1 green bell pepper, cored, seeded and sliced lengthwise into 1/4-inch-wide pieces

1 red bell pepper, sliced lengthwise into 1/4-inch-wide pieces

1 large white onion, thinly sliced

1 yellow summer squash, sliced into 1/4-inch-thick pieces

1 zucchini, sliced into 1/4-inch-thick pieces

1/4 cup chopped fresh cilantro

4 whole-wheat tortillas (about 8 inches each)

1 cup prepared salsa

1/2 cup reduced-fat sour cream
