Ingredients for 6 servings

1/4 cup finely chopped flat-leaf parsley

4 tablespoons extra-virgin olive oil, plus 1 teaspoon

1/4 pound prosciutto cotto, cut into 1/4-inch dice

1/2 cup bread crumbs

2 cups Basic Tomato Sauce, recipe follows

Salt and freshly ground black pepper

1/4 pound fresh mozzarella, cut into 1/4-inch dice

1 recipe egg pasta, rolled out to 1 sheet (see attached)

1/2 pound piece beef brisket, ground

1 cup beef stock

1 large egg

1/2 cup freshly grated Parmigiano-Reggiano, plus more to taste
