Quinoa Salad W/ Green Beans And Zucchini

This salad is also good when served cold.

Ingredients for 2 servings

2 tsps extra-virgin olive oil

1 cup broken green beans, remove string

1 zucchini, sliced

8 almonds, sliced

2 cloves garlic, minced

juice of a 1/2 lemon

1/2 tsp oregano, dried

1/2 tsp black pepper

1 cup quinoa, cook according to its package

Preparation

Combine all ingredients, minus the quinoa, in a medium skillet, saute over medium heat just until heated thru, about 5 minutes. After the vegetables and quinoa are done put the quinoa in a separate bowl and place vegetables over the quinoa. Drizzle with lime juice and serve.
