Strawberry Meringue Pie

1 baked pie crust


3 tablespoons cornstarch

1/2 cup sugar

1/8 teaspoon salt

1/2 cup cold water

1 teaspoon lemon juice

2 egg yolks (reserve whites for meringue)

2 cups strawberry puree

1 tablespoon butter

2 cups thickly sliced strawberries


2 eggs whites

1/4 teaspoon vanilla

2 tablespoons sugar

1/8 teaspoon cream of tartar



In pot combine cornstarch, sugar & salt. Stir in water, lemon juice egg yokes till mixed well. Over medium heat cook 2 minutes, stirring constantly. Add puree and cook until thickened. Remove from heat. Stir in butter and sliced strawberries. Let sit covered for 5 minutes. Stir and pour into pie crust. Let sit to cool. Preheat oven to 350 F. Meanwhile make meringue. Whip egg whites in bowl until fluffy. Mix sugar & cream of tartar together. Add to egg whites. Beat till stiff peaks form. Spread on pie and bake till meringue browns. Let cool then refrigerate at least 4 hours.
