2 tablespoons rice wine vinegar

Freshly ground black pepper

1 teaspoon sambal oelek or red chili paste

1 head Napa cabbage

1 tablespoon natural-style peanut butter

3 coins fresh ginger , about ¼ inch thick, plus 1 tablespoon finely grated fresh ginger
