3 cups dairy (whole milk, heavy cream, or a mix)

1 cup sugar

8 egg yolks

pinch of salt

1 teaspoon vanilla (optional)

8 egg yolks -- good grief. Gelato is MUCH easier and much more conducive to the imagination. Basically 2 parts fruit puree to 1 part simple syrup (1:1 sugar and water) and 1/2 c. cream, leave out the cream and you have sorbet. I have rhubarb/ginger mix ch
