6 tablespoons olive oil

5 medium carrots, coarsely chopped

4 celery ribs, coarsely chopped

3 medium onions, coarsely chopped

2 tablespoons tomato paste

1 bottle (750 ml) Syrah or other hearty red wine

2 bay leaves

10 whole black peppercorns

8 cups chicken stock or canned low-sodium broth

2 cups (packed) flat-leaf parsley leaves, finely chopped

4 teaspoons finely grated lemon zest

6 garlic cloves, minced
