1 tbsp vegetable oil

3/4 tsp fine sea salt

1/2 tsp black pepper

4 medium carrots, finely chopped

1 medium onion, finely chopped

2 x garlic cloves, finely chopped

1 (4-oz) can 1 (4-oz) can whole San Marzano tomatoes in juice, puréed in a blender with juice

1 1/2 cup dry red wine

4 brown veal stock or 1/2 cup cup Demi-Glace Gold concentrate

1 sprigs fresh thyme

1 x Turkish or 1/2 California bay leaf

1 tbsp Banyuls vinegar or red-wine vinegar

1 tbsp balsamic vinegar

20 x pearl onions (5 oz)

1 1/2 tbsp unsalted butter

2 cup chicken stock or reduced-sodium chicken broth

4 medium carrots, cut diagonally into 1 1/2-inch pieces

3 x thick bacon slices (preferably applewood-smoked; 1/4 lb total), cut crosswise into 1/4-inch pieces

8 medium fresh white mushrooms, trimmed and quartered lengthwise
