1 cup grated butternut squash

1 cup grated celery root

1 cup grated parsnip

1 tablespoon olive oil + more as needed

-- Kosher salt

-- Freshly ground pepper

2 tablespoons unsalted butter

1 cup thinly sliced leeks (white part only)

2 tablespoons unoaked dry white wine (optional)

1/2 cup grated raclette cheese (see Note)

1/4 teaspoon minced fresh thyme

3 tablespoons slivered almonds or pine nuts, toasted

-- Chives or chopped parsley (optional garnish)
