4-6 ripe tomatoes

1 medium red onion

4-6 cloves garlic

6 tbsp lemon juice

4 tbsp extra virgin olive oil

1 tsp salt , (or to taste)

1 tsp pepper , (or to taste)

1 tbsp fresh mint
