1 medium red pepper, cut into strips

1 medium green pepper , cut into strips

3 tablespoons apricot preserves

1 tablespoon soy sauce

2 teaspoons vegetable oil or canola oil

3 green onions , sliced (about 1/4 c.)

1/2 cup chicken broth

1/4 teaspoon ground black pepper

2 1/2 teaspoons cornstarch

2-3 cloves garlic , minced

1 (15 ounce) can baby corn, drained and cut into bite size pieces (optional)

1 1/2 cups hot cooked brown rice or cooked white rice

1/2 lb uncooked medium shrimp , peeled and deveined

1 (8 ounce) can sliced water chestnuts

1 teaspoon sesame seed , toasted
