3 apples, firm, crisp, peeled and sliced into 1/4-inch slices

3 leeks, trimmed, sliced (across into 1/4-inch slices) and rinsed to remove any grit (about 3 cups)

1/4 cup white wine

ΒΌ cup chicken stock

2 cloves garlic, smashed

1 tablespoon fresh sage, chopped

salt and pepper, to taste
