Ingredients for 4 servings

For Ginger-sesame dressing:

1 x zest of 1 lemon

1 1/2 oz ginger

1 tbsp granulated sugar

3/4 tsp cayenne

3/4 tsp salt

1 tbsp fresh lemon juice

1/4 cup unseasoned rice vinegar

1/3 cup soy sauce

2 tbsp canola oil

2 tbsp pure sesame oil

For Soba Noodle Salad:

8 oz frozen soba noodles

3 oz tofu

1 tbsp chopped cilantro

1 x scallion, green and white part

1 x cucumber

sesame seeds + cilantro sprigs for garnish sesame seeds + cilantro sprigs for garnish
