8 cups water

2 to 4 teaspoons kosher salt, or to taste

1 inch piece of ginger, peeled and thinly sliced

2 pounds winter melon, peeled and cut into 1-inch cubes (about 5 cups)

1 green onion, thinly sliced (optional)

2 teaspoons soy sauce
