  • 1/4 cup frozen peas
  • All-purpose flour, for dredging
  • 8 (3 to 4-ozs each) beef scaloppini (from London Broil or Top Sirloin)
  • 1 bay leaf
  • 1/2 cup dry white wine
  • 1 (14 1/2-oz) can diced tomatoes
  • 1 cup finely chopped onion
  • 2 Tbsps unsalted butter
  • Salt and freshly ground black pepper
  • 1 1/2 cups finely chopped peeled carrots (about 3)
  • 1/3 cup freshly grated Parmesan
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1-oz thinly sliced prosciutto, coarsely chopped
