It was out first time trying turnips and parsnips, and my first time trying greens in a dish other than "traditional green". The stew was amazing, flavorful and hearty. It had all of the flavored of fall. I would, however cut back on the time in the pressure cooker slightly.

Ingredients for 4 servings

2 cups chopped collard greens

1 cup dry red wine

1 tablespoon all-purpose flour

1 teaspoon chopped fresh thyme leaves

2 tablespoons chopped fresh parsley leaves

2 1/2 cups beef broth

1 pound beef stew meat, cut into 1-inch cubes

1 bay leaf

1/4 teaspoon salt

Rice, for serving

1 medium yellow onion, cut into medium dice

1 cup button mushrooms, quartered

2 stalks celery, cut into medium dice

1 tablespoon chopped garlic

1/4 teaspoon ground black pepper

1 tablespoon Essence, recipe follows

1 tablespoon olive oil

2 turnips, peeled and cut into 1/2-inch cubes

3 parsnips, peeled and cubed

1 teaspoon chopped fresh rosemary leaves
