Ingredients for 4 servings

1 1/2 teaspoons ground turmeric

2 tablespoons finely shredded carrots, for garnish

4 ounces pork shoulder or chicken breast, thinly sliced

1 1/2 tablespoon fresh lime juice

1/2 cucumber, thinly sliced

2/3 cup warm water

3 scallions, cut into thin rings

1 cup Vietnamese Dipping Sauce, recipe follows

1 teaspoon sugar

3 Thai bird chiles or serrano chile,

2 cups sliced white mushrooms, lightly Sauteed, drained

4 tablespoons vegetable oil

2 cups rice flour

1/2 teaspoon curry powder (Recommended: Vietnamese Golden Bells)

1 red or green leaf lettuce, leaves separated, washed and drained

2 cups bean sprouts

1/2 teaspoon salt

1 clove garlic, sliced

12 medium raw shrimp, peeled and deveined

5 or 6 sprigs each of mint, Asian basil, rau ram, and red and green perilla or any herb combination

1/2 cup unsweetened coconut milk

5 tablespoons fish sauce

3 tablespoons sugar

2 1/3 cups water

4 cups bean sprouts

Table Salad, recipe follows

1/4 yellow onion, thinly sliced (1/2 cup)
