4 x free-range chicken legs (thigh plus drumstick)

2 tsp Olive Oil

1 Medium Yellow onion

1/2 cup White Vermouth

1/2 cup Chicken Stock

1 x Bay Leaf

1 x Thyme

a few crushed black peppercorns

2 tbsp cider vinegar (I used apple balsamic)

1 tbsp honey (I used a bit more)

10 x ripe fresh figs - any kind you like
