3/4 cup Kalamata olives, halved or quartered

1 yellow bell pepper, chopped

1 large shallot, chopped

1/2 cup flat-leaf parsley, coarsely chopped

1/3 cup fresh mint, coarsely chopped

4 oz feta, crumbled

1 cup quinoa

2 cups water
