Ingredients for 4 servings

1/2 pound dried flat rice stick noodles

3 tablespoons tomato paste

3 tablespoons reduced-sodium soy sauce

2 tablespoons lime juice (from about 1 lime)

1 tablespoon honey

1 teaspoon ground ginger

1 large egg, lightly beaten (optional)

1/2 small yellow onion, very finely chopped

4 garlic cloves, finely minced

7 ounces (about 1/2 package) firm tofu, drained and sliced into 1-inch cubes

1 cup bean sprouts

1 cup snow peas or sugar snap peas, ends trimmed and thinly sliced on a diagonal

3 tablespoons dark sesame oil

1/4 cup toasted sliced almonds (optional)

1/4 cup roughly chopped fresh cilantro (optional)

1 lime, cut into wedges
