2 yellow onions, diced

4 celery stalks, diced

1 large fennel bulb, trimmed and diced

1/2 cup white wine

2 cups prepared French chestnuts, roughly chopped

Salt and freshly ground pepper, to taste

1 1/4 lb. mild Italian sausage, casings removed

6 Tbs. chopped fresh flat-leaf parsley

3 to 3 1/4 cups chicken stock, warmed, plus more as needed
