1 tbs oil

5 pound chuck roast

1 x onion , chopped

4 cloves garlic , chopped

1 cup red wine

3 cups beef broth

4 x sprigs of thyme

2 x bay leaves

2 tbs tomato paste

2 tbs dijon mustard

2 x salt and pepper

4 x carrots , peeled and cut into bite sized pieces

8 x new , potatoes , cut in half
